A fine dining restaurant run by Chef Luís Batalha, Senses reflects the magic of the local scents, colours and textures and adds an undeniable gourmet touch. With fantastic views over the Atlantic and a spacious outdoor terrace, the restaurant was created with great attention to detail and combines unique flavours, cleverly prepared by our Chef.
The restaurant's elegance stems not only from its refined décor and atmosphere, but also from its thoughtful, high-quality service, and of course from the delicious dishes that come out of Chef Luís Batalha's kitchen. In fact, Senses is also a meeting point for those who wish to learn more on gourmet cuisine as our Chef is available (by request) for live cooking shows.
With a comprehensive menu that honours the best Mediterranean cuisine, Senses was designed as a space where you can sample several dishes. Our portions are the ideal size so you can taste and share a few dishes with your other half or with your friends, whilst listening to the best jazz and chill out music and with a glass of wine or one of our delicious lifestyle cocktails in hand.
But, because we want your stay at the Cascade Resort to be as sweet as possible, our Chocolatier Kristof Deschuymere will complement your gastronomic experience with the finest macaroons and delicious petit gateaux, amongst other delicacies. The menu is an ode to the senses, where I strive to keep the link between the roots and traditions of this beautiful region and country. At the same time, I'm eager to deliver a virtuous re-interpretation of old successes sublimed by contemporary inspiration. Not with scientific arrogance, but with a genuine inspiration. I do know that senses can be described precisely through scientific data, but those who feel it, live it, will not find words or comparisons.
Regularly, I compare kitchen work with Formula 1- the pit stop shaking does not last 8 seconds, but 3 hours. It is hard work towards customer satisfaction. After the meal the customer leaves. The art lies in creating an experience that will remain in his/her memory.
